Morning folks! I never thought I’d say this after last month, but I do miss the rain. It’s gonna be another hot and muggy one today in the DFW metro. Silver lining here is that I’m going swimming this evening with friends. It’s been AGES since I’ve been swimming and I really can’t wait! I’m sure everyone is gearing up for this weekend. I know we’re planning and plotting things around here. Pretty much anything that runs off some of the kids excess energy is a good thing. Lots to do, eat, and see! Good morning folks! Another hot and sweaty day ahead of us here in DFW. I know those of you in the PNW are scorching right now. I was just talking to my Grandmother who lives in Idaho yesterday about it. She said that Boise hit a high of 110 yesterday.. WHAT?!?!?! That’s insane for that area this time of year. Honestly, that’s insane for there PERIOD! That’s just way too hot. That’s just too hot to do much of anything. I sure hope it doesn’t kill her garden with all that heat. Every year my grandparents swear they’re not doing a garden this year and every year they end up doing one.  They just can’t let go of all that good homegrown food. I can’t blame them. On that note, it’s time to check Amazon.com for today’s deals.

Hash Brown Casserole

Perhaps hash brown casserole isn’t what you’d automatically think of as a dinner item, but it sure sounded good to me. Sure you could do it for breakfast, but where’s the creativity in that? Haven’t you ever heard of brinner? (breakfast for dinner) Surely I can’t be the only one to have been a fan of Scrubs.

Kindle eBook Steals for June 25th, 2015

Good morning folks! Gonna be another hot one here in the metro. I want to get a little serious with you here today. Last night on the news I learned of the drowning of a 10 year old girl in an apartment complex pool. Her 9 and 11 year old brothers also almost drowned, but they were able to be saved. The pool water was so murky and cloudy that rescuers couldn’t even locate the poor girl at first. The mother of the children couldn’t swim and was helpless to save her children. This tragedy could have been avoided on several counts. So let’s talk about that. First off, GET SWIMMING LESSONS. There should always be someone at the pool with children that can swim. How are you going to rescue them if you’ll drown in the process? Secondly, visibility. This is an apartment complex pool.. therefore it should be crystal clear. If it’s not. STAY OUT! I’m sure there’s much more information that will be coming out about this in the future. Mainly people, just be safe. Watch your kids, and make sure that they’re with someone that knows what to do in an emergency. I urge all parents (honestly everyone should do this) to take CPR classes. The maintenance man for the complex pulled two of the children out of the water (he didn’t even know about the third) and gave them CPR. Without this man’s intervention, this would be an even greater tragedy. Stay safe out there folks

Slow Cooker Italian Beef with Spaghetti Squash

This stuff smells DIVINE.  Seriously y’all.. my kitchen is a wonderland of aroma right now and here I sit drooling at the computer putting this all online for you. Next time I make this, I’m investing in a bib to catch all this slobber. Ok slobber may not sound like a ringing endorsement, but if you make this you’ll know what I mean. I saw a few recipes of this online, but as usual, I decided to make my own version of it, because if you know me, you’ll know I can’t leave well enough alone. My version differs a little, but I think the changes are well worth it, so here we go!

Ok so I realize I should have lined up all the ingredients and taken a shot of that, but honestly I forgot, so here’s a picture of everything already thrown in. I promise, there is a roast buried under there.

Ok so I’m not a photographer.. I know. But that gives you a good idea of how it looks served.  I’ll definitely be doing this again especially with how fast my 4 year old inhaled it. Not sure she even chewed… Not that she’d really have to with how juicy and tender the meat turned out.

Slow Cooker Italian Beef with Spaghetti Squash

2-3lb beef roast
1 medium yellow onion diced4-6 cloves garlic minced
1 packet Good Seasons Italian Dressing Mix
1tsp garlic salt
1tsp ground black pepper
1/8 tsp cayenne pepper
1 can diced tomatoes (fire roasted if you can get it)
1 can small red kidney beans (drained)
2TBSP tomato paste
1 cup beef broth

Cook the spaghetti squash in the oven once the beef is done. Cut them in half, pull out the seeds, wipe the inside with olive oil, place cut side down on a cookie sheet and cook at 400F for about 35-45 minutes.

Put your roast in the crock pot and dump everything (minus the squash) in on top of it. Cook for 7-8 hours on low or 4-5 hours on high. Crock pots are pretty forgiving so adjust as you need.  Also if yours turns out like mine did and was a little soupy, I suggest picking out the meat and then pouring the rest into a pot and cooking it down for a little bit. Only took about 25 minutes and it was thickened enough that I was happy. Serve over the squash for an extra dose of veggies.

If you don’t want to use spaghetti squash, can’t find it, or don’t like it, just serve over regular spaghetti noodles. Voila! Just as yummy.🙂

Good morning folks! It’s gonna be another hot one here in DFW with a high of 96 today. I know some of you up in the PNW are seeing a lot higher temperatures already this year, which is just crazy. It’s always a trip when my Grandparents in Idaho are seeing much higher (100+) temps than I am here in Texas. Crazy crazy weather. I always find it fascinating how weather patterns change year after year. Like, this year, we got a TON of snow (for us) and then so much rain that there’s massive flooding. Have you seen the red river lately?

Daily Dose for June 19th, 2015

Good morning folks! Another beautiful and sunny day here in DFW.  It’s supposed to get up to the mid 90’s today so it’s going to be hot out. Luckily for me, I have a nice airconditioned home to escape to. Actually down here it’s not the heat that gets to me, it’s the humidity. I’m originally from high desert country. Single digit humidity is normal. It’s crazy how different the same temperature can feel with the addition or subtraction of humidity. Summer isn’t my favorite season for sure. I’m more of a Spring and Fall kind of girl, but obviously Summer has it’s place in the grand scheme of things, so I muddle through. On that note, it’s time to check out what Amazon.com has for us today.

Cream of Anything

So I was scrolling through Pinterest the other day and I came upon a recipe for Cream of Anything. Intrigued, I clicked on the link to see what it was all about. To my joy, I discovered it was a dry mix recipe for a soup base. Basically you can turn this stuff into any of the cream of soups by just adding whatever you want to the base. So say if you wanted cream of mushroom, just add mushrooms. Cream of asparagus? Add asparagus. You get the picture. I cook a lot of casseroles and a lot of them require a cream of some sort of soup, so I figured this could work out wonderfully!

The ingredients I used.

It went together super easy. I just crushed up my bullion cubes until I had enough. After that, it was just measure, mix, and voila!  soup mix!

According to the directions 1/3 cup mix + 1 1/4 cups water = 1 can of cream of whatever soup. Click the link below and check it out!

Good morning folks. It’s been a rainy couple of days with the remnants of Tropical Storm Bill hitting us here in the DFW metro area.  It’s been a busy few days around here. Yesterday I had a job interview. I’m really hoping I get it. I have a second interview for it on Monday, so y’all cross your fingers for me. On other news, I’m really looking forward to getting into our new apartment next month. A little more room and a playground for the kids, for only a little more money. Can’t beat that. It also has a pool that I can’t wait to check out. Anyway, time to check out the books over at Amazon.com.

Good morning folks! Things have been busy around here lately. Had a little one with a tummy bug, and then yesterday I had a job interview. Cross your fingers, send prayers, happy thoughts or whatever that I get the job.   It’s a little overcast here today, but it says it’s not supposed to rain until tomorrow. We’ll find out I suppose. If the temps could just stay in the mid 80’s I’d be a happy camper. lol I know that’s not really feasible, but a girl can dream right?
